Kabuki cuisine is known for its pure orthodox Japanese dishes along with others that have emerged as a result of Japanese and Mediterranean influences. The use of prime raw materials and the simplicity with which the food is elaborated offers a unique flavour.<\/p>\n
Rafael Carrasco, Chef at KABUKI RAW, is an apprentice of Ricardo Sanz, one of the key people responsible for the creation and development of the Kabuki Group. Mentored by Ricardo, Rafael learnt to interpret his kitchen secrets by working side-by-side with him. Before joining Finca Cortes\u00edn he worked as a chef for Abama Kabuki, a Michelin-star restaurant and Director of I+D for the Kabuki Group.<\/p>\n
KABUKI RAW, like the Japanese theatre after which it is named, is staged in a unique setting which permits guests to view Rafael Carrasco at work in the Kabuki kitchen and it is here, using only the highest quality raw materials and outstanding seafood from sustainable fisheries in the Straits, organic produce from our vegetable garden in addition to other featured produce typical of the Spanish cuisine, where his most emblematic dishes are served up together with others specifically created for FINCA CORTESIN,<\/p>\n
Rafael has over 10 years experience in the gastronomic world. Commencing in the Michelen Star Cenador de Salvador Gallego and chef to the House of Alba, his career has gone from strength to strength passing through various Signature Restaurants including Martin Berasategui, Carlos Posadas, Arzak and personal chef to Sr Botin. From 2005 he apprenticed with Ricardo Sanz, creator and director of the Kabuki Group with which he has closely worked and learnt all his kitchen secrets, was Chef of the Michelin Star Abama Kabuki Restaurant and I+D Director of the Kabuki restaurant, travelling to Japan and learning from the Three Michelin Star Seiji Yamamoto and in Australia, Tesuya Wakuda and Neil Perry took him under their wing.<\/p>\n","protected":false},"excerpt":{"rendered":"
