KABUKI RAW is the hotel’s signature restaurant and is managed by the Kabuki Group, world leader in Japanese cooking with five restaurants and a total of three Michelin stars
Kabuki cuisine is known for its pure orthodox Japanese dishes along with others that have emerged as a result of Japanese and Mediterranean influences. The use of prime raw materials and the simplicity with which the food is elaborated offers a unique flavour.
Rafael Carrasco, Chef at KABUKI RAW, is an apprentice of Ricardo Sanz, one of the key people responsible for the creation and development of the Kabuki Group.
